Fr. Dempsey's   Minimize

Chaminade has committed to provide a Saturday meal to the residents of the Fr. Demsey's house.  Fr. Dempsey's provides temporary housing for men that are working towards a more permanent situation.

We usually show up around 3:00 to start cooking, dinner is served around 4:30, and we are all cleaned up and ready to go no later than 6:00.

Spanish Rice - 10 lbs. ground beef, 3 lbs. rice, 3 big cans each of tomato sauce and diced tomatoes, 3 onions, 5 green peppers, 5 packages of taco seasoning

 Chicken Fettucini - one bag of chicken breast, 5 quarts of cream, 2 lbs of butter, 2 big bags of noodles, garlic, 5 lbs of grated cheese

Lasagna - 4 party size pans of lasagna, 2 big bags of salad, 4 boxes of garlic bread (20 pieces per box)

Chicken Divan - 1 large bag SAM'S chicken breasts (there are 32 in there), 1 large SAM's can of green beans, 2 large SAM's boiled new potatoes, 1 bag rolls, 1 bag salad, yogurt and chicken and a bit of mayo for Divan sauce

Mostoccioli - 5 boxes of pasta, 12 15 oz. cans of sauce, 6 lbs. of hamburger, 3 lbs. of sausage, 4 onions, 6 green peppers

Mediterranean supper-10-13 lbs. ground beef, 2C. green pepper, 2C celery, 2C onion, rice, 6-6oz. tomato paste, 4C brad crumbs, i can black olives, 6 cans eggplant

Spicy Chicken Stew- 32 chicken drummies, oil, 6 onions, 6 cans stewed tomatoes, 6 cans black beans, 6 cans kernel corn

Beef Stew - 10 lbs. of stew meat, 3 large onions, 2 huge cans of potatoes, 7 regular size cans of carrots, 3 regular size cans of peas, 5 beef gravy packets

Pulled Pork - 4 trays of BBQ Pork, 2 big bags of dinner rolls, 2 big bags of frozen corn, 2 bundt cakes

Lemon/Pepper Chicken: 35 chicken breasts, flour, veg. oil, ;  l large bag mixed green salad, new potatoes, 2 big bags of dinner rolls, i large can green beans, 2 bundt cakes,

Chicken Stroganoff: 3 large packages of chicken breasts (Sams), 7 yogurt, 7 cans of mushroom soup, 1 box mushroons, parmesan, 2 containers of cole slaw, 2 big jars of applesauce, 2 bundt cakes,

Chicken Stew:  9 lbs. chicken, 8 cans of potatoes, 4 cans peas, 6 cans carrots, 2 onions - sauteed, 4 packages of chicken gravy, 5 tbsp. minced garlic, 3 cups of cream, 4 cans of chicken stock, seasonings

Bruschetta Chicken Bake: 3 - 14oz can diced tomatoes, undrained, 6 pks. stove top stuffing, 10 lbs. chicken breasts, small pieces, 3 tsp. basil, 3 C. mozzarella, l large green salad, corn, 1 bag dinner rolls, 2 bundt cakes.
